Haveli Rasoi
Set inside a 200-year-old haveli in the old city, Haveli Rasoi serves the finest traditional Gujarati thali in Ahmedabad. The rotli is hand-rolled to order. The dal dhokli has been the same recipe for three generations. Nothing is written down.
Prem's Bistro
Gujarati food, but not as your grandmother makes it. Prem Trivedi studied at the Culinary Institute of America and came back to Ahmedabad to reinterpret his mother's recipes with French technique and a Noma-era reverence for fermentation. The results are unexpected and very good.
Manek Chowk Nights
By day a jewellery market. By night, the most democratic dining experience in India. After 9pm, Manek Chowk transforms into 200 metres of food stalls stretching from the old clock tower to the haveli wall. Come for the Jain pizza. Stay for the falooda.

The Grain Table
Every vegetable on the menu has a postcode. The Grain Table sources exclusively from farms within 200km of Ahmedabad — Anand's dairy, Sabarkantha's produce, Kutchi sesame — and the kitchen does very little to get in the way of that quality.
Kabir's Kitchen
The murgh malai tikka at Kabir's Kitchen is the best argument for non-veg in a proudly vegetarian city. The tandoor has been running since 1991. The owner, Kabir Hussain, still comes in at 6am to marinate the meat. The biryani takes four hours and it shows.
Dal & Dhokla
The best dhokla in the city, served at the speed of a chaiwalla. Dal & Dhokla has nine locations across Ahmedabad and the quality is consistent in a way that ought to be impossible for a fast-casual chain. The fafda-jalebi combo at breakfast is one of the great cheap meals in Gujarat.
