Gujarati food, but not as your grandmother makes it. Prem Trivedi studied at the Culinary Institute of America and came back to Ahmedabad to reinterpret his mother's recipes with French technique and a Noma-era reverence for fermentation. The results are unexpected and very good.
The khakhra chaat is the dish people talk about — a deconstructed version of the roadside snack, plated with pomegranate foam and kokum gel. It sounds like a caricature of modern Indian cooking; it tastes like you've been eating khakhra wrong for your entire life.
The wine list is short and seriously chosen, which is rare in Ahmedabad. The by-the-glass options include two natural wines from Maharashtra. Weekend brunch runs from 11am to 3pm and books up two weeks ahead in season.
