The croissants take 72 hours and you can taste every one of them. The owner trained in Lyon and refuses to compromise on butter. A small room, ten tables, no laptops after noon. A treasure.
Yash Thakkar came back from Lyon with a sourdough starter, three kilos of French butter, and an unusually strong opinion about lamination. His croissants are, by some margin, the best in Gujarat. The pain au chocolat is better.
The no-laptops rule is posted on a small brass plate near the door. Some people are annoyed. Most, once they sit down with a pastry and an espresso, understand. This is a place built for eating, not working.
